Mary, I've never made sauerkraut or sauerruben in quart jars. But however you make your sauerkraut, just substitute grated turnips. It works the same. And it lasts forever.

Can the Sauerruben be done in quart jars like sauerkraut. I no longer own a crock and would not want to make a large amount before trying a small batch first.

Somehow, between making sour pickles this morning and coming home this afternoon with turnips, I lost my Wild Fermentation book and recipe for sauerruben (which I hadn't even read yet, but knew I wanted to try). Google brought me here and now I've got a quart of sauerruben on the counter next to the sour pickles and sauerkraut I started today. Thanks for posting this so I could get on with my plans!

I made about 2 quarts of sauerrüben last fall -- it's really great, but I still probably have a quart-and-a-half left. It has a nice kick to it.How have you used yours other than with meatballs?
