Tandy, I never get tired of reading "Honey from a Weed." Edward Behr, in Eating Well, recently mentioned it as one of his all-time favorites as well, perhaps the best book on food ever written.

Hi Ed --

Tooling around the net for pickled green tomato recipes, I happened on your very nice blog. Among other things, I want you to know that Patience Gray's Honey from a Weed is my longtime FAVORITE cookbook/food book. Even with Consider the Oyster, and all of Alice Waters' books, that one has never left my side since the year it came out. How nice to find someone else who also loves it!

Cheers and here's wishing you a very happy autumn --

tandy in nc

Emily, you absoluet CANNOT substitute baking soda for pickling lime. I'm not a chemist, so I can't tell you exactly why. But these various food chemicals are formulated for specific purposes. They can't be interchanged willy nilly without risking a real disaster.
