
You can poach eggs in almost anything
Egg poached in beef broth.

We have a tub of leftover pot roast surrounded by the broth it cooked in sitting in the fridge. More broth than meat at this point. So I thought, why not put some of the wonderful cooking liquid to good use. Flavored with onions and carrots, paprika and ginger, it spent about five hours braising that piece of grass-fed chuck. Now it’s loaded with flavor.
I spooned a goodly portion of the geled broth into a small skillet, watched it melt and come nearly to a boil, then cracked an egg into the center, pushing a random piece of beef and a couple of small carrots out of the way. The result was a highly satsifying breakfast, and the gathering realization that you can poach an egg in almost anything.
Nice way to start the new year.

Cooked mine in peppered bacon grease this morning and was thinking similar thoughts – but didn’t quite envision THIS! Very cool though I’ll give this a whirl!
