Great post! thank you.
In my experience, it is more of the type of Carbs than the Carbs themselves. For instance, pies & pastries and buns with ingredients only food scientists can pronounce. are a whole other beast than simple Carbs Plus, we don't know if how much trans fat was in his sweet treats. Pasta, organic potatoes, good homemade bread from few ingredients can be a good thing....that is if don't have celiacs disease.

Do you know of any adult ed nutritional curriculum available that is not based on a carb-rich diet? I'm looking for some to use in community kitchen/garden development in an urban context.

I try to limit my carbs to 50 grams or less a day. Normal consumption is about 300. It's been more than a year since I ate a bowl of pasta. I do not eat bread or potatoes or any of that stuff. Well, maybe a tiny bit here and there. The carbs I do eat are more in the form of green vegetables, a little bit of fruit, the lactose in yogurt. It's definitely a different lifestyle, but I don't miss the carbs, unless I'm standing in front a dessert buffet.

If you've stopped eating starchy foods, what do you eat in a typical day? No carbs at all, or do you still eat whole grains? No pasta? That would be a tough one for me. Most of the rest I can do without.
