
Beets with red onion and chives
This is one of our favorites: beet salad with red onions. And in the summer, we like to add tomatoes. Toss with olive oil, red wine vinegar, chives. Have you noticed, the chives are almost ready to bloom. The lavender-colored flowers make a great addition to salads as well. The reason this salad looks so good is my wife: she julienned everything. Me, I wouldn’t have been nearly as careful. That’s why she gets the big bucks as a catering chef.
