Braised greens beans are good anytime

Swiss cheese omelet with braised green beans and bacon.

Green beans for breakfast? Sure! Why not?

We’ve harvested so many green beans from the garden I made a big batch of our favorite green beans braised for three hours. Consequently, we’ve been eating braised green beans just about every day. Me, I will gladly eat them for breakfast–or just about any other time.

Since I cook the beans with bacon, it only makes sense to have a couple more slices on the side. The eggs, of course, are from pastured hens, purchased at the Sunday farmers market. The cheese comes from our local dairy. And the bacon–well, we just got a big box delivered from Allan Benton, our favorite pork processor in Madisonville, Tennessee. We will be in hog heaven for some time to come.
