A leaner breakfast alternative

Fried eggs over chicken pot pie

We had home-made chicken pot pie left over from a catering job and I couldn’t let it go to waste. If you are trying to cut back on the fat in your breakfast, this would be one alternative to the usual bacon, although we love our bacon. I just cannot see good food going to waste.

My wife makes her pot pie from scratch using fresh fennel, carrots, baby potatoes, pearl onions, shitake mushrooms, along with chicken breast. She then prepares a biscuit dough. Shortly before serving, the pot pie filling is spooned into ceramic bowls and placed in a 425-degree oven. When the filling is bubbling hot, the bowls are topped with raw biscuit rounds. You know the pot pies are done when the biscuits have risen to their full height and are a proud, golden brown.

No biscuits with these eggs. The filling is quite enough.
