Green Tomato and Apple Chutney

A plethora of green tomatoes and apples is what we are dealing with at Spy Dog Farm. On account of a couple of overnight freezes, my wife has pulled all the vegetable plants from the raised beds yielding bushels of tomatoes in various stages of ripeness, but especially green ones.

You can only eat so many fried green tomatoes. Meanwhile, we have plenty of crisp apples in the orchard. The only thing to do is to marry these two to make one of our favorite preserves: green tomato and apple chutney. Just add raisins, onions, brown sugar, ginger and a few spices such as cinnamon, coriander and mustard seed. The recipe is here.

After boiling everything down, simply scoop into pint-size canning jars and process for 15 minutes in boiling water to seal the lids. They will keep on a shelf in your pantry for years. No kidding, years. We just recently finished the last of the jars we put up in 2009.

We love to serve this chutney with pork: pork roast, pork chops, you name it. Who new green tomatoes could taste so good?
