Do you eat kohlrabi leaves?

Kohlrabi is one of our favorite vegetables (why don’t they sell more of it in the stores and at the farmers market), but I started my plants a little late last fall and they never fully developed. I had a similar issue with my broccoli and someone suggested just eating the broccoli leaves. So when the kohlrabi emerged from the snow and started thinking about going to seed, I pulled the plants, harvested what swollen stems there were and picked all the leaves.

Admittedly, it is a bit time consuming, picking all those leaves individually. But a taste test indicated they would be delicious, so after picking them all I gave them a good soaking in the kitchen sink before cooking them in our biggest Le Creuset pot with a little olive oil, salt, red pepper flakes and cider vinegar.

There was a great heap of leaves, so I actually had to press them down into the pot. But they wilted soon enough so that I could turn them. I cooked them over low heat for perhaps 45 minutes. As you can see, they are perfectly tender and taste a bit like collard greens. Being a member of the same family–brassica–that only makes sense.

Now we count kohlrabi as another victory in our effort to eat last year’s garden before it can go to seed.
