I spent the last week in Berkeley, CA, embedded in the school district’s central kitchen. I wanted to see how this city managed to make the switch from feeding their kids industrially-processed convenience foods in school to feeding them real food made from scratch.
This series of articles on how the central kitchen in Berkeley makes food from scratch for some 3,000 kids every day will start next Monday. Yesterday I goofed and hit the “publish” button instead of the “save” button on the first of those articles. In the span of 12 minutes–before I realized the error and took the post down–it had already been tweeted and re-tweeted around the country. So some of you have had a sneak preview.
If you want to see the whole thing in its finished form, tune in next week. I think it will open your eyes to the changes parents can make when they set their mind to it, and how trained and dedicated chefs can make delicious food even on a school food budget.
