Kids Make Tomato & Basil Salad

We started a new year of “food appreciation” classes this week and I thought I’d begin the year with something easy and seasonal. Tomatoes are still going strong, and I have a thick patch of basil in my garden. Add a little red onion and you have the makings of a wonderful tomato salad.
I had the kids cut half an onion into small dice and toss it into a bowl. To that we added three big tomatoes cut into bite-size pieces. Finally they tore up the leaves from a long stem or two of basil. Season to taste with extra-virgin olive oil, balsamic vinegar and salt.
That’s all there is to it. But the kids were wild for it, even the ones who raised their hands when I asked, “Who really hates tomatoes?”
Parents be warned: I think you have some new tomato converts.

My experience as a substitute teacher years ago is that if the kids are involved in the making of the food, even when they told me they were not going to like it, they will more than likely love it. Although, your tomato and basil salad would be difficult for any child (or adult) to resist! — barbara
