Eggs & Shad, Take 2

My first treatment of the shad gifted to me at the local food co-op was simple but good: I sauteed it in butter and gave it a squirt of lemon. For the second pound of shad, I wanted to try something a little more elegant. I had a leek in the refrigerator and a cup of cream. All I needed were some mushrooms, easy enough to procure from the local grocery.
Saute the mushrooms and leek together in a little olive oil in butter. Season with salt and fresh thyme leaves. When the leeks are tender, the mushrooms are sure to be as well. Add the cream and cook until the cream thickens. Add pieces of shad, baste with the sauce, cover the pan and cook a few minutes until the fish is just cooked through.
For breakfast, add two fried eggs to the fish. I love it when the yolks spill into the cream sauce. Now that’s something to wake up to.
