Garden-Fresh Nachos

I’ve already confessed my family’s guilty pleasure in Velveeta so we don’t need to go there. But where melting Velveeta is concerned, don’t believe the Kraft recipes. It’s too thick for nachos. Add 1 can of Rotel to 10 ounces of cheese and you’ll have a perfect nachos pour.
For this platter of nachos we layered chips with all kinds of vegetables: green bell pepper, diced tomatoes, fresh corn on the cob, cilantro. We found pickled jalapeño peppers and black beans in the pantry as well. You are limited only by your imagination. Stop at your local farmers market and see what’s being harvested now.
This made a fine dinner for the three of us–economical, too.
