Christmas Pizza

I may take the crown for best popcorn, but my wife is queen of pizza. Here she is starting a new home-tradition for Christmas Eve eve.
Her secret is in the details. She starts the dough rising early in the day, then gets the oven good and hot: 500 degrees Fahrenheit. We keep a pizza stone in the oven at all times to maintain even temperatures. She rolls the crust thin, applies some corn meal to the wooden peel and pre-cooks the crusts on the stone before applying toppings. We never have soggy pizza.
We use the freshest ingredients on our pizzas and mostly we don’t use red sauce. Daughter is particularly partial to broccoli and pepperoni. Here’s my favorite: caramelized onions, Stilton cheese and fresh rosemary.
