Fried eggs over fresh salad greens with pork sausage.

The eggs and salad both were from earlier trips to the farmers market. If I’d had my act together, I might be harvesting my own salad. Sadly, I neglected to build a plastic “tunnel” in the garden this winter for growing greens. Still, this is a great mix of greens that lasts me through the week for $7.50. The sausage rope we get delivered from our local dairy.
I could eat this every day and never get tired of it.
