Beef tongue with garden salad and onions

I love, love, love beef tongue, first brined then slow cooked with leeks and garlic and herbs in a pot of water on the stove. It makes a great breakfast re-heated, especially over freshly picked salad greens tossed simply with olive oil and vinegar.

In our current heat wave, our salad patch was showing signs of going to seed. I uprooted the whole thing and spent a couple of hours washing it, sorting it, spinning it dry. It now resides in plastic bags in the fridge while we eat it as quickly as possible. Is there anything wrong with salad three times a day?
