What’s for Breakfast: First Arugula

Greens are great for sopping of fried egg yolks

This is always an interesting time of year in the garden. Coming out the back side of winter, the garden looks like death warmed over. But there are signs of life and even a few things to eat. Some of the greens we were harvesting last fall–collards, kale, mizuna, arugula–are springing back.

Very soon they will want to go to see and will become inedible. Meanwhile, though, we have some tasty pickings. Here’s our first plate of arugula. I’ve spread some over our favorite boiled beef tongue, dressed it with oil and vinegar, and topped it off with fried eggs loaded with local farm goodness.

In my book, this is a perfect breakfast.
