Poached Eggs & Roasted Vegetables

Here’s what my friend John and I had for breakfast recently: leftover roasted vegetables topped with poached eggs, Black Forest bacon on the side.
Can I just say, leftover are highly underrated as breakfast food? Take a look in your fridge. You may have breakfast options there you never thought of. I love it when the yolks from the poached eggs run all over the vegetables.
Fantastic! Poached eggs are ALWAYS a plus.
