Eggs & Shad

My reward for volunteering to fill a last-minute shift opening at the Cambridge Food Co-op was three pounds of fish.
Sounds awfully generous, doesn’t it? Each week co-op members are given the option of ordering fresh fish from Boston. Someone had ordered two pounds of shad and a pound of cod then decided they didn’t want to pay for it. The fish had been sitting in the freezer, perhaps more than a couple of weeks. “We heard you were a cook,” one of managers said as she offered me the fish.
Heck, I’ll take somebody’s cast-off poisson any day. I defrosted the shad in the fridge and last night sauteed half of it in brown butter for dinner. With just a squirt of lemon for garnish, it was superb. The leftovers I reheated this morning and smothered with a couple of eggs fried in bacon grease.
As far as I’m concerned, breakfast couldn’t be better: clean protein and a bit of fat. I’m thinking I’ll try the rest of the shad in a mushroom cream sauce. What do you think?
