Could this be the best Thai food in Washington County?

It doesn’t matter where you live. Really good Thai food is hard to find. Even in our former haunts in Washington, D.C., most of the Thai eateries are mediocre at best, the food too sweet and inartfully prepared. Here in Upstate New York, just finding a Thai eatery is a challenge. So imagine our delight when this Thai food truck popped up on the outskirts of Greenwich, parked on the site of a restaurant that burned down long ago, next door to the Aubuchon hardware store.

Twins Thai Food is a family operation. All of their food is made fresh and by hand, including the spring rolls, which may be the best we’ve ever tasted: light, crispy, delicious. The panang strikes a perfect balance of coconut milk, curry and peanuts. Ditto for the other curry dishes. Our one beef was with the tofu: It wasn’t fried as we would like it in our panang. The solution: stick with the chicken.

The Thai food truck only shows up on Fridays and Saturdays between 11 a.m. and 4 p.m. But we are grateful for any good Thai food we can get in an area where “dining” typically translates as pizza, burgers and fries. For us, Twins Thai is worth the 10-mile drive….

Farming is one of the most hazardous professions. A 62-year-old Kingsbury man was killed recently when the hay loads he was towing jacknifed, overturning his tractor and pinning him underneath. Another farm worker tried unsuccessfully to free the man with a separate piece of equipment. He was pronounced dead at the scene.

A planned fire department training facility in Hoosick Falls has been put on hold. The facility was supposed to be installed in the local waterworks, but the building needs too many repairs. Firefighters currently train in Wyanantskill and Ballston, resulting in excessive travel costs.

Also in Hoosick, the town board has voted to have the tennis courts sealed and painted.

The Schaghticoke fair opens this week and promises to be quite spectacular. Featured events include “Elephant Encounter,” offering personal experience with the world’s largest land animals, “Galaxy Girl,” the world’s highest aerial thrill show, and “Freestyle Motocross Championship Series,” extreme sports entertainment. The fair runs August 28 to September 2.

Boy Scouts from Greenwich troop 127 and Venturing Crew 6936 recently spent a perfect Saturday hiking Mt. Haystack in Vermont. The trail provides spectacular views of Deerfield Valley.

A newly hired flood plan manager told the Salem board that two of six building permits recently issued there should have been reviewed for flood plan issues but apparently were not. Alton Knapp told the board  Salem has numerous flood prone properties, creating a situation “that needs more than just a band-aid.”

Finally, Rensselaer County Dairy Princess Lindsey McMahon is thinking about the upcoming fair in Schaghticoke. “Growing up on a farm, my family and I have attended the fair every year since I was just a little girl to show our cattle.” Now, as dairy princess, she gets to take part in the annual smoothie contest, hand out stickers at the milking parlor and scoop ice cream at the Dairy Princess Ice Cream booth.

McMahon says working at the fair means you don’t always have time for a full meal. So this week she recommends a “quick and easy cheddar cheese dip” that pairs perfectly with your favorite chips. Just mix together 1 16-ounce container of sour cream and 1 1-ounce package ranch dressing mix. Add 1 3-ounce can bacon bits and sprinkle 1 cup shredded cheese on top. Chill before serving.
